Cream and Onion Potato Chips

Thin crisp potato slices deep-fried and tossed with an onion and cheese seasoning, made fresh at home as a snack.

Ingredients

Quantities are raw weights, before cooking.

  • 500 g Potato, peeled, sliced thin4 medium potatoes
  • 400 ml (365 g) Groundnut oil, for deep frying1.7 cups
  • 300 ml (300 g) Water, for soaking slices1.25 cups
  • 6 g Onion powder2 teaspoons
  • 4 g Salt0.75 teaspoon
  • 20 g Mozzarella cheese, finely grated2 tablespoons, grated and driedStore-bought: check its packet for allergens.

How to make it

  1. Peel the potatoes and slice them very thin using a mandoline or sharp knife.
  2. Soak the potato slices in the water for 10 minutes to remove excess starch, then drain well.About 10 min
  3. Spread the slices on a clean cloth and pat completely dry.
  4. Heat the groundnut oil in a deep pan to 180 degrees C.180 °C
  5. Fry the potato slices in small batches until golden and crisp, about 3 minutes per batch.About 3 min
  6. Lift the chips out and drain on a wire rack or paper towel.
  7. In a small bowl, mix the onion powder, salt and grated mozzarella to make the seasoning.
  8. While the chips are still warm, toss them with the seasoning mix until evenly coated.
  9. Let the chips cool for a few minutes before serving or storing.

How thin should the potato slices be for this recipe?

Slice the potatoes as thin as possible, ideally with a mandoline, so the 500 g of potato fries evenly into crisp chips.

Why soak the potato slices in water first?

Soaking the slices in the 300 ml of water for 10 minutes removes surface starch so the chips turn out crisp rather than soggy.

Can the seasoning be made ahead?
